Can anyone think of scripture in the New Testament which corroborates Genesis - that God created the Universe in 6 days? I'm sure I've read it somewhere, but I can't find it in my Bible or using search engines....

I don't think there is a verse in the New Testament that says six days. There are a bunch that mention creation, etc.

Mark 13:19 For in those days shall be affliction, such as was not from the beginning of the creation which God created unto this time, neither shall be.

Romans 1:20 For the invisible things of him from the creation of the world are clearly seen, being understood by the things that are made, even his eternal power and Godhead; so that they are without excuse

I Corinthians 15:45 And so it is written, The first man Adam was made a living soul; the last Adam was made a quickening spirit.

II Corinthians 4:6 For God, who commanded the light to shine out of darkness, hath shined in our hearts, to give the light of the knowledge of the glory of God in the face of Jesus Christ.

Ephesians 3:9 And to make all men see what is the fellowship of the mystery, which from the beginning of the world hath been hid in God, who created all things by Jesus Christ

Colossians 1:16 For by him were all things created, that are in heaven, and that are in earth, visible and invisible, whether they be thrones, or dominions, or principalities, or powers: all things were created by him, and for him:

Hebrews 11:3 Through faith we understand that the worlds were framed by the word of God, so that things which are seen were not made of things which do appear.

Although it doesn't speak of the prior 6 days specifically, I think this one is pretty close...

Heb. 4:4
For he spake in a certain place of the seventh day on this wise, And God did rest the seventh day from all his works.
